Cinnamyl acetate (CAS number 103-54-8) is a colorless to pale yellow transparent liquid with a sweet and rose like aroma, naturally found in cinnamon oil. Its unique aroma characteristics and chemical stability make it widely used in the food industry in essence blending, flavor enhancement and specific food processing scenarios.
Core use: "soul modifier" of food essence
The core function is to serve as the fixative and flavor modifier of food essence, and improve the overall sensory experience of food by adjusting the release rate of aroma and enhancing the sense of aroma hierarchy. Its application covers three mainstream aroma types: fruity, floral, and spicy, including:
Preparation of fruity essence
Tropical fruits: In tropical fruit essence such as pineapple, mango and banana, the natural sense and persistence of aroma can be enhanced by simulating the ester volatilization characteristics of mature fruits. For example, the addition of 0.5% -1% cinnamic acetate in pineapple essence can make the aroma gradually transition from the initial sharp acidity to the base note sweet fruity flavor.
Drupe: In the essence of cherry, peach, apricot and other drupes, it cooperates with benzaldehyde, γ - caprolactone and other components to build a three-dimensional aroma structure of "flesh+stone". According to the Japanese Public Regulations on Food Additives, the purity of cinnamic acetate in cherry essence should be ≥ 98%, and the amount should be strictly controlled at 0.1% -0.3% to avoid covering the main body of fruit flavor.
Berries: In strawberry, blueberry, raspberry and other berry essence, balance the sour sweet ratio by inhibiting the volatilization of sour substances. For example, adding 0.2% cinnamate acetate to strawberry essence can reduce the perceived acidity by 15%, while improving the aroma diffusion radius.

Preparation Methods
The cinnamic acid method is obtained by the esterification of cinnamic acid and ethanol in the presence of sulfuric acid.
Mix 1260g of cinnamic acid, 3800mL of absolute ethanol, and 300mL of sulfuric acid, and heat to reflux for 8 to 10 hours. Recover ethanol, cool and separate the acid layer, wash with water and 10% sodium carbonate. Then wash with water until neutral, dry with calcium chloride, and evaporate under reduced pressure to obtain 1~1.2kg of ethyl cinnamate, with a yield of about 60% .
Benzaldehyde method: obtained by reacting benzaldehyde with ethyl acetate.
Add anhydrous ethyl acetate containing absolute ethanol to metallic sodium, cool to 0 degrees, and add benzaldehyde. React at ~5P for 1 hour, and the obtained crude ester is evaporated under reduced pressure to obtain ethyl cinnamate, with a yield of about 70%.
Experimental steps
Add: 3g cinnamic acid; 15ml ethanol; 15ml cyclohexane; 1ml concentrated sulfuric acid into a 50ml round bottom flask, shake well, and add zeolite.
Reflux on the water bath for about 2-3 hours until the liquid in the middle of the water separator is about 3ml. Record the volume and continue to evaporate excess benzene and ethanol (released from the water separator) and remove the heat source.
Add 30ml of water, and add solid Na2CO3 in batches to neutralize to neutrality. Except 2 kinds of acids. That is, sulfuric acid and cinnamic acid.
Separate the liquids and extract the water layer with 10m petroleum ether. The organic layers were combined and dried over anhydrous calcium chloride.
Recover petroleum ether, heat for distillation, and collect the 270°C fraction.

Cinnamyl acetate, an organic ester derivative, exhibits a range of applications across multiple industries. Its unique floral aroma and chemical properties contribute significantly to its widespread use.
Fragrance industry
It has an elegant aroma and is often used as a spice additive in the field of spices. By reacting with cinnamyl alcohol, a cinnamyl ether compound can be generated, which has a stronger aroma and better dispersibility. It is widely used in the production of soaps, cosmetics, and perfumes, serving as a fragrance enhancer that imparts a pleasant aroma to these products. Its floral scent is particularly suitable for formulating bellflower, jasmine, and gardenia fragrances, adding depth and complexity to perfumes. It is also employed as a fixative, ensuring the long-lasting scent of perfumes.
Synthetic intermediates
As an intermediate in organic synthesis, it has extensive application value in the field of organic synthesis. Through the reaction of this product with other compounds, various organic compounds can be synthesized, such as coumarins, flavonoids, etc. These compounds have extensive application value in fields such as medicine, pesticides, and chemical engineering. Therefore, it can be used as a synthetic intermediate in organic synthesis reactions.
Food additives
It has good chemical stability and heat resistance, and can be used as a food additive in food processing, particularly as a flavoring agent. It is commonly used in the formulation of food flavors such as cherry, grape, peach, apple, and pineapple, enhancing the taste and aroma of various food products. For example, when making chocolate, candy, and other foods, adding an appropriate amount of this additive can increase the aroma and taste of the food, improve the quality and taste of the food. What should be noted when storing this substance?
The storage of Cinnamyl acetate requires attention to the following aspects:
1.Temperature control
- It should be stored at low temperatures to avoid any changes in its properties. The recommended storage temperature is usually 2-8 ℃ or 4 ℃, and there is also information suggesting storage at -20 ℃, indicating that it can be stored for 3 years under these conditions, while it can be stored for 2 years at 4℃.
2.Environmental conditions
- The environment for storing this compound should be kept dry, sealed, and away from light. A dry environment can prevent it from getting damp, a sealed environment can prevent it from evaporating and coming into contact with other substances, and avoiding light can slow down its decomposition rate.
3.Packaging and containers
- It should be stored in appropriate containers with good sealing performance to prevent the entry of gases, moisture, or other pollutants. Meanwhile, the container should be able to withstand pressure changes during storage and comply with relevant safety standards.
- Cinnamyl acetate should be avoided from being mixed with the following substances during storage:
4. Avoid storing substances
- Strong oxidizing agent: It is an organic compound with reducing properties, so it should not be mixed with strong oxidizing agents (such as potassium permanganate, hydrogen peroxide, etc.) to avoid oxidation-reduction reactions and potential hazards.
- Acidic and alkaline substances: They may undergo hydrolysis reactions under acidic and alkaline conditions, generating corresponding alcohols and acids. Therefore, it should be avoided to mix with strong acids (such as sulfuric acid, hydrochloric acid, etc.) and strong bases (such as sodium hydroxide, potassium hydroxide, etc.).
- Flammable and explosive substances: The substance itself has a certain degree of flammability, so it should not be mixed with flammable and explosive substances (such as gasoline, alcohol, acetone, etc.) to prevent fire or explosion accidents.
- Heavy metal ions: Certain heavy metal ions (such as copper, iron, etc.) may catalyze their decomposition reactions, leading to a decrease in product quality or the production of harmful substances. Therefore, during storage and use, contact with substances containing these heavy metal ions should be avoided.
- Incompatible fragrances or chemicals: When used as a fragrance, it should be avoided from being mixed with other incompatible fragrances or chemicals to prevent chemical reactions that may affect the quality and safety of the fragrance.
